Where to Eat Sushi in Chandigarh

Chandigarh is a long way from any coast, which is why most people here have quietly given up on the idea of ordering sushi with dinner. The city has plenty of bars and plenty of good North Indian kitchens. A proper sushi list is rarer.

Seville runs one. A full list of rolls at eight pieces each, sitting on the same menu as the cocktails in Sector 26.

Why a bar has a sushi counter

Seville was built as a bar and lounge first, so the kitchen was always going to serve food that works standing up as much as sitting down. Sushi does that better than almost anything. It arrives in pieces, it shares without ceremony, and it holds up next to a drink instead of fighting it.

The Asian section did not get bolted on as a novelty. It sits alongside a Mediterranean and Mexican section, a pasta and pizza list, and the bar's own small bites, which tells you the kitchen is set up for range rather than one cuisine done cautiously.

The vegetarian rolls

A good share of the list is vegetarian, which is unusual for a sushi menu anywhere.

Tempura Asparagus Uramaki is the easiest one to like, tempura asparagus and avocado under crisp sesame seeds. The Asparagus Philadelphia Uramaki runs on cream cheese and tobiko, richer and softer. Seville Garden Maki is the house roll, lotus and avocado with a spicy mango sauce and teriyaki, and it is the one that reads least like a copy of somebody else's menu.

There is a Vegetable California Uramaki for anyone who wants the familiar version, and a Golden Crunch Roll that goes in a different direction entirely, fritto misto under truffle mango, coriander sauce and sriracha. Ask about the vegan version of that one.

Fish and chicken

Salmon does most of the work. Salmon Spicy Mayo Maki keeps it simple. Salmon Avocado Uramaki adds avocado and spring onion under spicy mayo. Both are the straightforward test of a sushi kitchen and they are the two to order if you want to judge the room quickly.

Beyond that there is a Dragon Roll with tobiko, cucumber, avocado and pickled ginger, a California Uramaki with crabstick, and a Prawn Tempura Uramaki. Chicken Karaage Uramaki is the outlier, fried chicken with teriyaki and scallion, and it is the safe order for anyone at the table who would rather not eat raw fish.

What to order it with

This is a bar, so the honest answer is a drink. The signature list is built on real cordials rather than syrups, which shows in things like Peppers and Symphony, a bell-pepper gin with peach cordial and tonic, or Gentleman in Green, a cardamom and clove bourbon with betel cordial. The sharper, more citrus-forward end of that list sits better with raw fish than anything sweet does.

The rest of the Asian menu, and the rest of the kitchen

Sushi is one section of a food menu that also runs Mediterranean and Mexican, pasta and pizza, and a starters list, with the bar carrying its own small bites and a cafe list alongside the drinks. That breadth is the reason Seville works for a table where one person wants sushi, one wants a pizza and one only came for the cocktails.

It also means you can build a full meal around the Asian section without the kitchen treating it as a side project. Start with rolls to share, move to something hot from the wider menu, and stay for a drink after. Most tables here end up eating across two or three sections rather than one, which is how the menu is laid out to be read.
